Sara Rossi is Head Sommelier at Adam Byatt’s Michelin starred Trinity restaurant.

Previously at The Cut Restaurant on Park Lane and at Restaurant Gordon Ramsay, Sara works with a wide selection of hand-picked producers and small independent winemakers and oversees the vast wine list at Trinity.

Sara was awarded GQ Sommelier of the year in 2020 which makes her very much one to celebrate in our eyes!

Co-founder of RASSA

At just 27 years-old, Olivia Higgs co-founded new virtual cookery school RASSA, which helps budding chefs to create their own original dishes and discover cuisines and cooking techniques from the far edges of the world.

She launched RASSA to support the UK industry and its chefs during the lockdowns, and this growing community-based platform is now helping those at home learn from the experts.

Aurelia brings the much-loved cuisine of her grandmother Antoinette to London, and focuses on authentic French dishes, prepared with the same love and joy that her grandmother imbibed into her family dinners.

After living in London for five years, Aurelia became homesick and longed to recreate her childhood memories through food. She now owns two London sites – in Victoria and Covent Garden – with her husband Jean-Baptiste.
