In honour of International Women’s Day, we wanted to shine a light and show our appreciation for a few of the many women shaking up the hospitality industry.
Sara Rossi
Head Sommelier at Michelin starred Trinity Restaurant in South London
Sara Rossi is Head Sommelier at Adam Byatt’s Michelin starred Trinity restaurant.
Previously at The Cut Restaurant on Park Lane and at Restaurant Gordon Ramsay, Sara works with a wide selection of hand-picked producers and small independent winemakers and oversees the vast wine list at Trinity.
Sara was awarded GQ Sommelier of the year in 2020 which makes her very much one to celebrate in our eyes!
Olivia Higgs
Co-founder of RASSA
At just 27 years-old, Olivia Higgs co-founded new virtual cookery school RASSA, which helps budding chefs to create their own original dishes and discover cuisines and cooking techniques from the far edges of the world.
She launched RASSA to support the UK industry and its chefs during the lockdowns, and this growing community-based platform is now helping those at home learn from the experts.
Aurelia Delclos
Owner of London restaurant Chez Antoinette
Aurelia brings the much-loved cuisine of her grandmother Antoinette to London, and focuses on authentic French dishes, prepared with the same love and joy that her grandmother imbibed into her family dinners.
After living in London for five years, Aurelia became homesick and longed to recreate her childhood memories through food. She now owns two London sites – in Victoria and Covent Garden – with her husband Jean-Baptiste.
Debbie Cappadona
General Manager at Palé Hall Hotel, Snowdonia
In 2019, Debbie became General Manager at Palé Hall, the 5-star country retreat in Snowdonia and one of only three Five-AA-star hotels in Wales.
Debbie’s hard work has led the hotel to achieve acclaim as one of the greenest hotels in the UK, and was awarded a Green Michelin Star in 2021 for its sustainable practices.

Holly is Managing Director of award-winning creative studio DesignLSM. DesignLSM have created stand out hospitality experiences for a diverse portfolio of world-class clients within the hospitality industry, including D&D London, Gaucho, The Alchemist, Sumosan, Burger & Lobster, Galvin Restaurants, Searcys, Carluccios, Ritz Carlton Hotels, Hilton, Marriott, Kempinski, plus many more.
Since joining the agency, Holly has driven and built up the studio, bringing her considerable brand, commercial and design strategy to the hospitality industry.

General Manager of Canopy by Hilton London City
With over 20 years of experience across Europe, including 10 years in Central London, Beatriz is the General Manager of the new opening, Canopy by Hilton London City.
Canopy by Hilton London City is a lifestyle hotel featuring 340 rooms including 35 suites. Situated in the heart of the city, the hotel comes with a rooftop bar, café and a destination restaurant.
Beatriz is passionate about giving back to the community and is currently a board member of the Aldgate BID.
